Organic chia chicken burgers

 

Shopping list

500gm organic chicken mince
3 spring onions very finely chopped
1/2 cup mint leaves finely chopped
1/2 cup parsley finely chopped
2 tablespoons chia seeds
1/3 cup currents
1 egg
1/2 cup finely grated parmesan cheese
Breadcrumbs to thicken if required
Pepper & salt

Method

Combine chicken mince with all ingredients and use hands to mix well. Chia seeds absorb water so don't be too concerned if your mix is slightly on the wet side, if it really is too moist, add some bread crumbs. Roll mix into your perfect sized burger patties, I like mine on the smaller side as they cook quicker place them on a plate, cover in glad wrap and pop in the fridge for at least 20 mins (if you're an early bird like me, you could prepare in the morning and cook when you get home :)...

Simply heat a pan and drizzle with a little oil ( I use rice bran oil as it has a higher heating point so you avoid nasty free radicals from over heating olive oil....), cook the burgers for a about 5 minutes on each side or until golden brown and cooked through. Cooking times will depend a little on how big you made them....

These are brilliant in a pita pocket with salad and a little mayo or lashings of my new avocado mayo :)

My notes: it's really important to buy organic chicken. These beautiful animals are treated so badly in non-organic farming operations...my ayurvedic doctor always used to say, "How can we possible expect an animal to nourish our bodies when we've treated it badly'....it makes perfect sense to me.
